This week a few dropsites received pipian squash. This is a 500+ year old heirloom from Costa Rica grown by our farmer friends at Finca Pura Vida near Fayetteville. We enjoy peeling this squash and baking or sauteing it like any other summer squash recipe. Its great also for soups or as a sauce.

we were wondering what on earth to do with ours and google was no help!
We roasted ours along with some other veggies in a little olive oil and herbes de provence and it was delicious!
this week share is so little, not enough for a week at all. :(

I just made my own version of ratatouille using our squash, eggplant and red pepper. Yummy!
I just bought one of the pipián squash from Finca Pura Vida at the Grogan's Mill farmers' market. I'll be curious to taste it.
